Making ME Some Dinner

Eversince I changed my schedule to 2AM-11AM (Sunday/Monday off) and enrolling two subjects in my MBA, I hardly had any time to cook for myself anymore. And so if I have time, I make sure I treat myself real well.

I initially planned to have grilled salmon, grilled zucchini and buttered halved baby potatoes garnished with thyme and rosemary but ended up having pan-seared salmon on a bed of mixed greens with stir fried bean sprouts and carrots and corn. I also made blanched baby potatoes with honey mustard dressing and dried marjoram.

I had a good dinner and some blackberry merlot on the side. Now, I only have the local news to watch and I'm set to go to bed until it's time to wake up and prep for work.
